From other posts I've read it's normal behavior, although it's not exactly clear why they do it. My Cham is 6 months old and does this as well, typically when I'm misting him. Just make sure there isn't any loose bark he can swallow (it sounds like you already have), and don't worry about it.

I just use a cup that is deep enough that the crickets can't jump out - about 5" deep. He has no problem picking them out of the cup. I do hand feed, he'll pick crickets off my fingers, or superworms from the palm of my hand.
Any wide or full spectrum fluorescent light will do, but it needs to be reasonably close to the plant - within a few feet. With the exception of pothos, which will tolerate over-watering, water once a week until water runs through the pot/out the bottom. Let the soil dry out between waterings...
