In Florida, Dubias are out of contention. Go with Discoids here. Also the Black Soldier flies are pretty simple if you can start a colony and attract native flies to lay eggs, it never stops producing.
You can use these Jiffy Strips too. They are little peat pots sold for starting plants. Pretty sterile, inert peat and paper pulp or something. I use these for roaches and crickets along with egg crate.
