I never had a incubator, I have not heard good things about the exo terra incubator. I heard the fan breaks down or some function doesn't work after a while. What are you trying to incubate?
The reason you want it to dry out is so the cage is not always wet (that was not a very good answer) This lowers the chance of respiratory infections and other infections.

I can't find most of these at my grocery store. I can find papaya, spearmint leaves,mustard greens and basil though. I use lots of common veggies as well as some others like squash.

Be careful with pill bugs are heavy metal bioaccumulators meaning the can consume and tolerate some levels of heavy metals that can be toxic to your chameleon. Here is one blog about them from Sandra's extremely informational helpful...

I would just change the light schedule back to normal and I would also change the light schedule to 8am to 8pm. Mine are usually awake when the sun comes out and sleep around 8pm.

Wow that is amazing! I would give him a couple weeks to adjust and I agree on hand feeding him. I would also take the substrate out of the enclosure though and is that a water bowl i really can't tell from the picture. What do you have to feed him?
