As far as her setup goes you should put an actual plant in there or two if you can make them fit. Also I would add more climbing things. On amazon they have moss sticks that you can tie wrap together or stick into the cage vertically and horizontally. You could also by some of those fake vines...
She might be a little nervous if she was shipped from somewhere far and then was handled by someone new. As the person above said try other feeders but also maybe give a day or two off of being handled and see if she eats/drinks more.

Depends on your chameleon. Some just hangout on a plant or two, but I have a real active boy so he tends to get out of his plants and travel down the drive way....or anywhere really. He fears nothing but cats, blue trash trucks, strangers (depending), and kids in red. He's a weirdo.
