Mites can become a problem in roach bins especially on uneaten foods, although dubia are not a species that live symbiosis with mites they seem to attract them still.

I'm concerned about the first picture it appears to me as if you pick your chameleon up. Hope its just maybe my perceived perspective but i dont recommend grabbing chameleons.

Apple didn't do that for me, i do still put small pieces of butternut squash or sweet potato in but they never really eat it think its too hard for their mouthparts.
I find keeping them warm makes them all change in smaller timeframe, around my ambient (uk temperature) i get steady 2/3 flies a day.
Coccidia? I would be going overboard with hygiene regime and deep cleaning daily while on the meds.
Just upping spot cleans and deep cleaning can be an effective treatment for low parasite loads in its self.
Some who have had coccidia cases have thrown all plants & sticks out 😯
