Ok so he's a young adult. Say he's around 8-9-10 months. Even a year. Jeez. Ok so would that change him drastically on how he behaves, eats, etc?

I'm sorry , what's a sub adult. I've only ever heard of baby, juvenile, then adult.

I even called back a couple days later and asked and he said yeah yeah they're roughly around 6 weeks old.

This is a picture of the day we got him on April 15. They said he was 6 weeks old . Here he is on may 9 which is almost a month later so he should be what they claim 10 weeks or 2 or so months. And today July 25.

Besides the obvious and ask the vet how else could I know how old he is exactly. Or is it just by appearance?Does it make a difference in his eating habits?
