Well, my veiled has been pretty restless lately. He is only a baby and he has just been staying in the same place throughout the day and he is keeps going into a brown colour then back to green, is this normal?

The jungle mixture gives the tank a more jungle feeling for the chameleon, and when it does come down to eat- they'd be walking the same thing that is in the jungle. I just think that chameleons should have the closest thing to the natural habitat as possible as they have been taken from it.

You should have some kind of jungle mixture at the bottom instead of newspaper, and maybe instead of plant pots- get some logs, cut them and locate them all over the tank then add some fake plants around it which you can wrap around the logs.

Give him/her as much as it can eat. Make sure the food is visable for the chameleon to see! Chameleons are not greedy creatures, they only eat when they're hungry so it just won't eat when its unhungry. As long as its eating, you're fine but I would try and make it eat over 5 of the food you are...
