Have you changed the compact uv to a linear uv bulb yet? It wouldnt be the heat bulbs causing the problem it would be uv.
You really do only need one 100 watt bulb in one spot as a basking area. the chameleon will decide then the temperatures he wants buy regulating where he is in the cage.
Mealworms are not a great feeder to feed all the time, morio worms are better but should make up no more than 20% of the diet.
Chameleons easily get bored of one feeder and stop eating. usually giving a good variety of feeders stops this. Mine get at least four different feeders a week...
The best way is spraying the enclosure down a couple of times a day. Remember chameleons need peaks of high humidity, not constant high humidity.
The cage needs to dry out between mistings too.

It depends on how old they are and how quick they are growing. A young animal growing quickly is going to be shedding more often than a fully grown adult with little growing to do.

Is the uv a tube or compact bulb? On a cage that high you really need at least a 10.0 tube that covers the whole length of the cage.
Also you really should only need one heat bulb for basking. Three is a bit overkill and isn't giving the best temperature gradient.

I recently got a bag of sticky tongue farms vit all to try an my crickets seem to like it. I usually use bug burger dry with a mixture of fresh fruit and veg to add moisture. Not seen many others use vit all though.
