Angry cham

So, I've been reading that chameleons don't like being held. I've had charma for just over a week, almost a week and a half, and any time I put my hand in her life tank, to feed, etc, she hisses. Today, I very calmly and slowly put my hand in her tank and rested it on a branch next to her. I ended up accidentally knocking over another branch that fell next to her, it didn't hit her. But when it fell she hissed at it and started striking it with the side of her body, so I moved the branch because she was obviously stressed out. She didn't hiss at my hand, but didn't make any obvious attempts to move towards it, and until the branch moved she was a beautiful light green color, the color she is when she sleeps. Is this a good habit to keep up? I won't try to handle her if it will stress her out, but I don't want her afraid of my hand either.
